Honey Walnut Filling
Ingredients
468 ml honey
3 egg whites
2 ml teaspoon salt
7,5 ml vanilla extract
100 ml walnuts (chopped)
Method
Heat the honey slightly.
Beat the egg white, salt and vanilla extract with an electric beater until stiff.
Add the heated honey.
Beat for 10 minutes until mixture has the right consistency.
Add the walnuts.
Mix well.
Pour the filling into a piping bag with a large star nozzle.
Lemon Almond Filling
Ingredients
750 ml ricotta cheese
375 ml icing sugar
10 ml lemon juice
10 ml lemon zest
250 ml almonds (chopped)
Method
Combine the ricotta cheese, icing sugar, lemon juice and lemon zest together.
Beat the mixture with an electric mixer until smooth and fluffy.
Add the almonds.
Mix well.
Pour the filling into a piping bag with a large star nozzle.
